The original idea was a bread that is 50% bread flour and the other 50% one or more of the ancient grains. For the preferment, I mixed some starter (75g) with bread flour (200 g), rye flour (200g), and water (450 g) and left the covered bowl to sit overnight at room temperature.

  • Then I added bread flour (780 g) and my remaining spelt flour (68 g) and emmer flour (225 g) along with rye flour (487 g) to the mix.
  • Using a dough scraper and my hand I combined everything until it was shaggy with no dry flour and then put a cover on for a thirty minute sit.
