How it works

  • Made with fresh-milled durum, Mediterranean soft wheat (exclusive to Barton Springs Mill), Rouge De Bordeaux red whole wheat.
  • All milled in my Mockmill 200 and mixed in my Ankarsrum and open baked with steam.
  • The Durum was milled, sifted with a #30 drum sieve, and re-milled at the finest setting.
  • It is usually not used in bread, but I found the small amount used had little effect on the gluten strenght of the dough.

Details worth keeping

The total amount of fresh-milled flour was 80%. Mediterranean wheat were milled on the finest setting and not sifted.
