# What Helios Hotel is Helios Hotel is a new three-level Greek restaurant on Glenferrie Road in Malvern. Despite the name, it is not a pub. The site covers about 1,200 square metres and seats up to 300 people across a spacious ground floor, mezzanine that looks down onto the main dining room, private-dining spaces and a light-filled covered rooftop.
# Who's behind it The restaurant is run by Athenian chef Ioannis Kasidokostas and his wife and business partner Maria Tsilfoglou. They previously opened Aegli in South Melbourne and closed Sowl in Carnegie to focus on Helios. Kasidokostas draws on experience working in Michelin-starred kitchens in Athens and says the venue is intended as "a gathering place."
# The culinary approach
- Dolmades: rice combined with prawns, wrapped in silverbeet and charred in a josper oven, finished with a tangy prawn-head-based sauce described as "something like XO but more acidic."
- Vegetarian plates: pot-cooked horta (wild greens) and a wood-fired cabbage salad finished with smoked graviera and bechamel.
# Drinks and wine Cocktails have a Greek bent. A gin-basil-smash-style cocktail substitutes tsipouro for gin, and a negroni is brightened with Greek bitters. The wine list is a major focus: the owners want to make uncommon Greek grape varieties more accessible, and they will offer bottles to take home at a discounted price (example given: 40 percent off the list price for a bottle you try that night). Because Helios holds a general liquor licence, it can operate as a bottle shop.
# Layout and capacity Tables are generously spaced across the ground floor. The mezzanine accommodates larger groups with sightlines to the main dining room. Private rooms and the rooftop are set aside for events. The overall capacity and variety of spaces position Helios to host both everyday dinners and larger bookings.
# Practical details Address: 256 Glenferrie Road, Malvern. Dinner service runs Tuesday to Sunday. The Helios team says the venue's size and name were chosen to create a casual place for people to gather rather than to operate as a hotel.
